QUINOA SALAD  (serves 6 )
 
3 cups quinoa, cooked
1 big tomato, cut in small cubes
1 jalapeño, seeded and finely chopped
¼ cup fresh coriander, chooped
2 tablespoons red onion, finely chopped
¼ pound feta cheese crumbled
½ cup black greek olives, chopped
2 tablespoons lemon juice
1 clove garlic, peeled and finely crushed
Salt and black pepper to taste

In a small bowl mix the oil, lemon juice, salt, pepper and garlic. Season with this dressing the salad ingredients you have placed in a salad bowl, mix well and refrigerate covered until you are ready to serve.

 


 
 


 




 
 

     
Remember to wash quinoa until water has no foam. To cook the quinoa, boil it in double its amcount of water, for about 10 minutes over medium heat; then, reduce the heat to low and cook for another 10 minutes, or until all water is absorbed.
