QUINOA SALAD (serves 6 )

3 cups quinoa, cooked
1 big tomato, cut in small cubes
1 jalapeño, seeded and finely chopped
¼ cup fresh coriander, chooped
2 tablespoons red onion, finely chopped
¼ pound feta cheese crumbled
½ cup black greek olives, chopped
2 tablespoons lemon juice
1 clove garlic, peeled and finely crushed
Salt and black pepper to taste

In a small bowl mix the oil, lemon juice, salt,
pepper and garlic. Season with this dressing the
salad ingredients you have placed in a salad bowl,
mix well and refrigerate covered until you are ready
to serve.
